Run stations when slow, prep between shifts, and expedited at night. Some menu development. I helped turn this restaurant into a place where people wanted to come eat. We had a constant growth of two to five percent while I was there. I helped cultivate a staff that wanted to return year after year and instilled a sense of pride for the crew in what they did.
