Started a full table service 96-seat restaurant in 100-year old Victorian house with spouse Joe Sanders, featuring Southern Style American food, with emphasis on fresh! Fresh fish and shrimp, Angus Beef, vegetables and salads. Jefferson Street Cafe was the first restaurant in Kerrville to serve truly fresh fish (Blackened Redfish, Green Redfish, Salmon Oscar) and the first to promote Texas wines by the glass, in addition to serving California, French and other wines.

  • Managed FOH operations to provide quality and standards to meet the BOH quality and standards my partner provided - coming together to exceed customers expectations.
  • Again we won Best All Around Restaurant, Best Fish, Best Desserts, etc in the Kerrville Daily Times Best of Kerrville awards year after year. We were also written up in the Houston Chronicle in 1988, and were included in the Top 10 Best Small Town Restaurants in Texas Monthly's first such category in 1990.
  • Engaged with customers on a daily basis to expand customer base and repeat business - and to build customer enthusiasm to try new wines. We were the first to sell better wines by the glass when no other restaurant in town was doing so - as well as promoting an ever growing and changing wine list.
  • Assisted wait staff in building menu expertise to answer customer questions and make personal recommendations, especially driving wine and homemade dessert sales.
  • Helped wait staff execute timely and efficient processes to drive first class guest service. Held daily mini meetings to achieve new goals.
  • Conducted weekly wine meetings with our staff (and invited other restaurants staffs) to learn in-depth about the wines to increase sales. Always had weekly or monthly wine sale contests with prizes awarded to top servers for by the glass and by the bottle sales. Every month, every year, exceeded the previous month and year sales.
  • Sold the restaurant after 15 years, when a local realtor approached us with an out-of-town offer to buy our business .

  • An example: during the first Alumni "Recall" Weekend I assisted in, my suggestion of the added event of a Hill Country Wine Tour (of the fledgling vineyards in Fredericksburg) was a great hit and increased Recall attendance in following years.
