As the daughter of Restaurateurs, I spent my formative years in and around my parents Chinese Restaurant "The Happy Dragon". Over the course of my youth, I severed in every capacity from the back of the house, food prep, to cook, to Chef to the front of the house, Hostess and Waitress. I learned from the best, and during the summer and winter breaks from college I would assist my parents in the management of the Happy Dragon, to give them some well deserved time off. ?
During College I choose to go in a different direction,. I studied fashion design. Upon graduating college I open my own Tailor-Seamstress shop. I owned and operated Carmen's Sewing and Alterations of Kenilworth, NJ for 20 plus years until I relocated it to Charlotte, NC. I successfully ran Carmen's Sewing and Alterations in the Charlotte for 7 years until I closed the business to relocate to Md. with my Husband. ?
Now that I've settled in to Maryland I was thinking about what to do with myself, I thought about re-opening Carmen's Sewing and Alterations, but that did not excite me. I began seriously considering returning to my roots, the Restaurant Business. My parents owned and operated a Chinese Restaurant, they were of Chinese/Peruvian descent. I being of Peruvian ancestry would offer authentic Peruvian food, specifically Pollo La Brasa. My knowledge of Cooking Peruvian food I done it all my life, along with my experience in my parent's restaurant, and my experience and knowledge of running successful businesses has made this transition in the the Restaurant Business a no brainer.
