Pull all meat invoices and check all meat orders from the night before. Make sure meat case is properly pulled so no expired product stays in the case. Cut and fill the case to company standards by following the proper cutting list. Make sure all cold cuts and frozen doors are blocked and worked. Keep a clean and sanitary dept. Make meat, cold cut, and frozen food orders for the day. Have an inventory at the end of every period.
Put away and properly rotate all meat deliveries. Cut and fill the case by 10am opening. Make sure all the butchers are following the proper cutting specs to maintain a high gross profit margin. Make orders when manager is off.
