When I started as Food Manager / Concession Mgr. in 2012 my main goal was to improve food quality and maximize profit for the band parents. This wasn't as easy as I had hoped it would be , as my food vendor was out of Houston and nobody knew who my other vendor reps were.
After getting information needed I set out on obtaining the best product for consumers as well as obtaining it at the best price. Looking around the concession stands it was apparent that many things needed to be updated. I first started out by obtaining chip racks and candy racks to display merchandise in. No more boxes setting on the counter. I obtained a local food wholesaler that was able to offer top brand products at a money saving price. With vendor being local I was able to get more than 1 delivery a week during busy football season. While establishing relations with new vendor a better tasting cheese and chip was found for nachos as well at a better price.
It had been brought too my attention that the fine arts department as well as athletics had for years been receiving al sorts of complaints about concessions. Observing operation I undertook writing operational manuel and began providing training for the bands concession persons. Having everybody operating on the same page the same way at concessions reduced confusion for workers and customers.
Profit for the bands was the underlying reason we had all been working concessions, after the wheels working all working and confusion and uniformity was now in place, I decided to look at why profits were not where they needed to be. I found that due to lack of stock rotation they a lot was going out the door as outdated. This was quickly resolved then the discount policy for food to workers both inside the concession stand and outside the concession stand was address. No longer were schools allowed to prepare and take home food for every member of their bands from the concession stand, second limits were placed on the amount of food and who could obtain it, and for what discount from outside the stands. This was for police officers, custodians, buss drivers etc. Also band parents that were not working stands were not allowed to enter and eat what they wanted.
A sign was posted that advised customers that if they had any questions or concerns that they could email and I would answer. The signage also included a short statement of why merchandise was limited etc.
Over the years I built a strong relationship with athletics, and was able to get word out on playoff events allowing schools to find workers for staffing. This relationship also helped in them understanding my job as well as me understanding theirs.
