I've been with the PF Changs brand now for over 12 years. I started as a pantry cook, and moved to a Sous Chef, and then to Culinary Partner. I'm currently the Operating Partner at the Fountains at Farah location in El Paso. My focus is to move up within the brand to help instill "the message" which was created over 2 decades ago, as well as provide direction, promote growth, champion change, and support those to create the better world
PF ChangsEl Paso, TXPantry Cook/Wok Cook
I was an original hire at the El Paso location #9973. I was in charge of opening, and closing the section/station. Our focus was execution of various recipes to spec, as well as executing at a high level.
At night, I was responsible for the cleanliness of our kitchen, as well as filling our prep sheet with on hands for our chef. Ordering produce was my introduction to chef administrative duties, which I took over during my time as an hourly
PF ChangsChesterfield, MSSous Chef
Our role as the Sous Chef was to delegte, oversee, and execute our shifts as directed by our Culinary Partner.
Our number 1 priority was Everclean/Safety and Sanitation
Ordering, prep sheets, p-mix, inventory, invoice trackers and labor trackers were all daily duties that were given to me as the lead Sous Chef during my time in Chesterfield. Then came schedules, along with learning how our P&L works. We were given monthly quizzes on our P&L budget to create awareness within our Management team
Organization was a big responsibility. Not just shelves being organized, or the walkin, but shift management and organization of our shift was always a priority
PF ChangsChesterfield, Baton Rouge, El PasoCulinary Partner
During my time as a Culinary Partner with PF Changs, I was responsible for-
#1 The safety and sanitation of our restaurants and promoting a positive work environment for our staff
Coaching, developing, and giving feedback to our Sous Chef and Management teams
Food Cost-we would review daily p-mix from the night before, and enter into a spreadsheet and save. For each location I worked at, I had years of information that could tell me what our sales were, how much of an item we sold on any particular day, and what day of the week it fell on
Labor Cost-Cross-training was and is still a HUGE focus for us. Getting employees cross-trained, and motivated to perform was always top of mind
I taught myself how to reconcile our P&L, review, and I would report to our OP with wins and opportunities for the month. I'd print, highlight, and make notes for all managers for our bi-weekly manager meetings.
I assisted in numerous offsite events and openings for our brand that included-
-Byron Nelson Event with Art Kilmer and Lorrie Fikkas
-2 yrs at the Waste Management Open with Art Kilmer and Lorrie Fikkas
-Grapefest with Art Kilmer and Lorrie Fikkas
-New Orleans walk n roll marathon with Art Kilmer and Kevin Nagle
-Baybrook opening wok trainer with Art Kilmer
-Ridgeland Mississippi Wok support trainer Art Kilmer
-I was part of our Dojo team in my Market Partners region Kevin Nagle
