  • GS-1863-7, Working in a large poultry processing plant that has recently converted to NPIS
  • I am Carcass Inspection (CI) trained to perform 100% inspection of carcasses to prevent adulterated product from entering the food chain
  • My duties also include ensuring that plant personnel are handling product in a sanitary manner
  • While performing duties as a CI, I have observed several adulterated carcasses such as coalescing tumors, fecal contamination and septicemic/toxemic which required me to take regulatory action
  • Upon noticing the defects, I immediately stopped the line and informed the establishment supervisor to have birds removed from the line and then I notify PHV for further observation and action
  • I am educated to condemn carcasses as needed or direct them to reprocessing/salvage
  • I also observe and report establishment persistent and unattended defects to the PHV for evaluation and action as needed
