Responsible for the entire food service operation including a public cafeteria which generated over $400k in sales. Performed and supervised all duties related to the position including Menu Planning, purchasing, receiving, Supervised 35 FTE'S and a management team of 6 including The Clinical side of the operation, budgeting, special affair planning, customer satisfaction, implementation of innovateive programs for cafeteria marketing, implementation of QI projects through employee empowerment. Sat on all hospital comittes related to the position i.e QA, Marketing etc. Coordinated all food concessions for the hospital's annual community fair which grossed in excess of $250k in receipts. Receive no deficiencies in JACHO accreditation and County and State surveys.
Delaware State Hospital, Wilmington, Delaware-4/90 to 7/92
Director of Food Services in a 330 bed short/long term hospital for the mentally ill. This was the State of Delaware's first venture into outsourcing management contracts of any kind. DSH had a satellite operation consisting of 3 different points of service buildings on the campus with the food prepared and transported
From a centralized kitchen. I was also responsible for feeding 2 other facilities under state contract, one was a psychiatric facility for children (approx. 750 meals per week) the other was a contract to temporarily coordinate the preparation and delivery of meals for a new womens correctional facility until the facility's kitchen construction was completed (approx. 4,200 meals per week) In August of 1991, the State of Delaware contracted the Wood Co. and my department to operate their cash operation on campus. It was a small coffee shop/grille/sundry business which generated over $200k in projected sales.
I oversaw all aspects of this complex operation, worked in conjunction with The State Purchasing Department and was responsible for managing a staff 70 FTE's through a CBA between the State of Delaware and local 640. During the first year of the contract I was credited with saving the State over $100k in food and labor.
The hospital was regulated by JACHO, Delaware Department of Health and Human Services, as well as Medicare and Medicaid.
Gwynedd Square Center, Lansdale, PA - 4/86 to 4/90
Food Service Director in a 180 bed LTC/Private Pay Facility. Started up as a new account for the Wood Co. The facility was under provisional license by the State of Pennsylvania due to Dietary conditions prior to Wood obtaining the contract. Was instrumental in clearing all deficiencies from that survey and staying deficiency free throughout my tenure at the facility. Performed all management duties called for as described in previous descriptions of my career. Supervised staff of 25 associates.
