Supervise inmates to ensure that food items are prepared in accordance with OP-X production requirements. Trains workers in methods pf performing duties and assigns and coordinates work to promote efficiency of operations. The position participates in the preparation and serving of meals and food items. Requisition supplies and equipment to maintain inventory levels.
Maintains a safe, sanitary work environment, which to conforms to all standards and regulations. Adheres to safety policies and accident reporting procedures.
Reviews monthly menus and ensure all food items are ordered.
Trains inmates on proper cooking procedures.
Prints and distributes recipes. Directs inmates in the use of Aramark recipes.
Assists in conducting inventory. Requisition orders as needed for approval.
Adhere to and maintains preparation and production guidelines according to OP-X standards by reviewing and approving production and temperature logs.
Supervises inmates in food preparation and tray assembly. Ensures OP-X guidelines are being met.
Participates in preparation and serving meals.
Ensures proper portion and ensures any special dietary requirement are being fulfilled.
Ensures timely and efficient meal service.
Assigns and coordinates work of inmates to promote efficiency of operations
Obtains accurate daily population counts and reviews with staff.
Adheres to security policies and procedures. Ensures storage areas are locked at all times. Ensures that all kitchen tools and equipment are returned to their designated secure area. Ensures all keys are returned and secured.
Provides effective direction and ensures inmates are productive.
Develops a sanitation schedules and ensures that all cooks, inmates, and/or food service workers adhere to the assigned schedule.
Oversees cleaning of kitchen and tray assembly area. In addition, oversees washing of kitchen utensils and equipment according to sanitary methods.
Completes all documentation in order to meet, and exceed OP-X standards, to include the Supervisor's Detailed Road Map (Levels 1-3).
Properly receives and stores food and food related items. Requisitions supplies and equipment to maintain stock levels. Monitors stock levels and reports any discrepancies to Direct Supervisor.
Participates in the preparation/5 P's (Participation, Pulls, Portion Control, and Post Production), storage and assembly of meals and food items.
Follows company's Standard of Operation for food handling and storage. Follows HACCP policies and procedures with regard to proper food handling procedures.
Determines work procedures, prepares work schedules and expedites workflow for inmates and/or aramark employee workforce.
Recommends disciplinary action, reviews documents with Food Service Director/General Manager for approval.
Completes all required training.
Conducts monthly team Safety and 15 minute OP-X Training.
Performed other job duties as assigned.
Oversaw staff at various facilities ensuring that company standards were being met at each individual unit.
Administered support when needed including meal reliefs at each unit.
Ensuring sit specific security policies were in place, from cooperate buildings, commercial space, to retail chains.
Responsible for protecting the safety of staff, visitors, and patients who entered the facility.
Responsible for securing all facility property.
Assessing all unauthorized person.
Reporting malfunctions and safety hazards with all hospital facilities and grounds.
Maintaining the fire safety system.
Documentation and report writing of any incident occurring during work shift.
