Initially working as a bartender and server, I became the lead dessert chef creating most of the dessert menu items. Created countless chocolate items and managed the production of these items for 6 restaurants at one point. Through Cafe Gratitude I co-authored the all raw desserts cookbook "Sweet Gratitude" published in 2008.
Co-founded Coracao Confections in 2008. Company is still operating and providing incredibly healthy and delicious chocolates and confections to customers across the country.
