You write a good paralegal internship cover letter by crafting a unique letter that addresses how your skills and experience fit the needs expressed by the employer (without trying to sound like a lawyer yourself). The letter should also be brief and addressed to the hiring individual, if possible.
While it may be tempting to show off your knowledge of legal language (herein, herewith), the power of your cover letter will come from clear statements outlining key skills or experience that make you a great fit for the job.
It’s also important to mention specialized training that will make you more valuable to the employer, such as having taken classes that focused on in-depth litigation issues. You also can mention organizations that honed your leadership/organizational/writing/legal skills. If you have technology skills (it’s expected you have knowledge of MS Word so don’t mention it) then include the ones that can help an employer, such as Excel, PowerPoint, or Westlaw. Finally, if you speak a foreign language fluently, then that can also aid in your internship search since many employers seek interns who can work with diverse populations.
